Baromètre review: our verdict
No sign, a street door on Moulay Ali, a descending staircase: Baromètre plays the speakeasy to the hilt. Down below, a counter lined with jars of herbs in the style of an old pharmacy, and a cocktail menu drawing from Moroccan spices, with homemade syrups, bitters, and liqueurs.
The mixologists explain what they pour, and it's at the counter where you need to sit to enjoy it. The cuisine, Mediterranean with local accents, accompanies the glasses; many come "just for a drink" and stay for dinner. For a tête-à-tête or a small group of curious souls; not for a group of fifteen who wants to dance.
The glass to order: a house spice cocktail, leaving the bartender to choose. The trap: coming on a Friday without a reservation, the room is small. The right slot: right at opening, at 6:30 PM, to get the counter.
