Rihla review: our verdict
Rihla, meaning "the journey," lives up to its name: the signature restaurant at the Ritz-Carlton Rabat Dar Es Salam follows the itinerary of Ibn Battuta, the 14th-century explorer, from Moroccan flavors to Persian and Asian cuisines. There is no fusion here; each region keeps its recipes, and you compose your own journey by selecting a dish from each stop.
In the evening, musicians accompany the dinner and the bar operates alongside. The sharing starters open the journey well, the classic Moroccan dishes hold their place, but the cuisine still feels a bit searching on some new plates, and the dining room sometimes seems understaffed for an establishment of this caliber. It is the address for a curious dinner, for two or with friends who want to travel at the table without leaving Rabat. It is not yet the place for a flawlessly executed business lunch.
The good tip: start with an assortment of starters to taste several stages of the journey. The pitfall: come in a hurry, as the service, still finding its rhythm, may lack staff. The best time slot: dinner, the only service of the house, from 6:30 pm to 10:30 pm.
