La Collégiale review: our verdict
The change is noticeable right from the amuse-bouche: at La Collégiale, a Franco-Thai chef has taken the helm, infusing French cuisine with spices and ideas from Asia. The menu follows the seasons, with recurring highlights such as tataki de bœuf, royal sea bass ceviche, or aged meats. Each dish arrives carefully plated in custom-made crockery that you won't find anywhere else.
The dining room has been completely renovated, understated and elegant, and the atmosphere remains intimate. The welcome is attentive, the service discreet and efficient. At lunch, it's the ideal place to make a connection; dinner suits tête-à-tête as well as gatherings of friends, with wines and cocktails to support. Those nostalgic for the former Franco-Mediterranean Collégiale won't find their familiar spots: the cuisine has taken a completely different direction, at 78 avenue Hassan II, in Guéliz.
Dish to order: tataki de bœuf, or royal sea bass ceviche when it's on the menu. The good deal: the entrée-plat-dessert menu at 240 DH, raised in May 2026, or the lunch set menu at 190 DH in July 2026. The trap: aiming for a Sunday, as the house is then closed.
