Patron de la Mer review: our verdict
The black rice paella is what you'll remember when leaving Patron de la Mer. This Hivernage establishment puts everything on the sea, with a Spanish and Catalan menu: prawn or ink paellas, tapas, oysters, grilled octopus, tempura prawns and txanguro, the gratinated crab. The goods arrive daily from the ports, and the fish served in the evening has the freshness you expect.
The setting contrasts with the rest of the city: colonial volumes and high ceilings, an open patio overlooking the pool, a pergola glass roof, a cocktail bar, and the Lola Sky Lounge on the roof to finish with a view. A musician accompanies the dinner at the piano; a valet takes the keys in front of the door. Children are welcomed without fuss, making it suitable for a large family table as well as a group of friends. Less so for lunch: at midday, the dining room can be empty, the terrace closed, and some fish of the day or the prawn paella may be unavailable.
The dish to order: the black rice paella. The trap: the coffee at the end of the meal, charged at 50 DH (recorded in August 2026), and the low benches, not very practical for eating. The best slot: in the evening, on reservation, when the house is at full capacity.
